Vinification
After careful selection of the grapes and destemming, a pre-fermentation skin maceration was carried out, followed by the light pressing of the grapes. After that the must underwent decanting, followed by the fermentation of the must in new French oak barrels. At the end of alcoholic fermentation the wine aged for a period of 12 months in the same barrels, during which batonnage was performed.
Taste
Mineral notes, combined with smoked wood and fresh fruit. Good acidity, highlighting the combination of freshness with notes of wood and minerality. Beautiful finish all in intensity.
Cocktails and pairings
It is best served with fatty fish, cod in its various forms, stews, as well as oriental cuisine. It should be served at a temperature between 12°C and 14°C. To be consumed immediately or within the next 7 years.
